Where soft-water brewing was invented
Hiroshima's water was long considered too soft to brew with — until Senzaburo Miura cracked slow soft-water fermentation in the 1890s and unlocked a fuller, sweeter, more fragrant style. The prefecture went on to host Japan's national brewing research institute, making it the technical heart of modern sake.
